What Should I Make For Family Dinner, For My Inlaws And My Family?

My family is very health conscience. My husband’s family likes the greasy southern food. Fried chicken, collard greens kind of things. How can I come up with a menu that makes everyone happy? Without me being in the kitchen forever.
